Little girlie went to school in non-uniform and little man coloured in some Pudsey bears and made a spotty crown at Preschool, so I thought I’d make some spotty cupcakes…I made strawberry flavoured frosting and decorated with smarties – yummy
Easy Peasy Cupcakes (makes 12)
2 large eggs
1tsp vanilla essence
125g caster sugar
125g self-raising flour
Preheat oven to 180, put all ingredients in bowl and beat/mix until smooth.
Line tin with cases and half fill, bake for 18-20 minutes.
Frosting (Cupcakes from the Primrose Bakery)
110g unsalted butter, at room temp (I used margarine!)
60ml semi skimmed milk, at room temp
1 teaspoon good quality vanilla extract (I used strawberry!)
500g icing sugar, sifted
Few drops of food colouring (optional) (I used yellow gel colouring)
Beat the butter, milk, extract and half the icing sugar until smooth.
Gradually add the remainder of the icing sugar and beat until smooth and creamy.
When adding colouring always start with small amounts.
